Honey & mustard glazed chicken thighs with chunky parnips

This is a quick, & tasty, wintery dish which makes for a lovely Friday night dinner while it’s dark and cold outside. Don’t know why, it just is. Don’t be stingy with the parsnips, no matter how many you make, they’ll get eaten. Trust me.

Serves 4-5
Preparation time: 10 mins plus marinating time (30 mins)
Cooking time: 40 mins

2 packs (approx 1kg) chicken thighs
5 tbsp olive oil
2 tbsp honey
2 tbsp coarse-grain mustard
1 tbsp red wine vinegar
2 tbsp chopped fresh thyme
4 medium parsnips, peeled and cut into wedges

Place the chicken thighs in a shallow dish. To make the marinate whisk together the oil, honey, mustard, vinegar, thyme and seasoning. Pour over the chicken and turn gently to coat. Cover the dish and chill for 30 minutes, turning once halfway through.

Preheat the oven to 190C, gas mark 5. Cook the parsnips in a pan of boiling water for 5 minutes. Drain and leave to cool.

Add the parsnips to the chicken, then toss to coast in the marinade. Transfer to a roasting tin in a single layer. Roast for 40-45 minutes, turning once during cooking, until the parsnips are golden and cooked through and the chicken is cooked through with no pink meat, with juices running clear. Serve with greens of your choice… with ginger beer or vintage cider.

Glazed roast duck

This is the best duck I have made to date. It came out beautifully brown, with five-spice, honey and other brown flavours with meat juicy and flavourful. A success, which I hope to repeat every time I want to roast a whole duck. It was the first time I decided to steam the duck simply because it reduced the overall cooking time to 1 hour 45minutes, which is better than the usual 2 1/2- 3 hours it usually took me to slow roast a duck.

Here’s the recipe:

time to make 2½ hours, out of which 30 min is prep the night before

1 whole duck (4 to 5 pound)
1 tablespoon Chinese five spice powder
2 teaspoons sugar
2 teaspoons salt
5 slices fresh ginger (I went a bit crazy there as one can never have enough ginger)
4 cloves garlic (ditto)
1/2 bunch green onions (didn’t use these, forgot)
1 tangerine, peel cut in big strips
1/4 cup rice vinegar
1/2 cup honey
1/2 cup soy sauce

To reduce the fat and produce a crispy skin, begin by trimming the excess fat from the neck and body. Rinse the duck, inside and out, and pat dry thoroughly with paper towels. Combine the Chinese five-spice, sugar, and salt in a small bowl. Rub the spice mixture all over the duck, inside and out. Salt and five-spice powder makes a fragrant dry marinade, which draws some of the moisture from the duck so that the spices penetrate. I left the duck rest overnight in a larder so it was a bit air-dried as well.

When ready to rock and roast, stuff the duck cavity with the aromatics: the ginger, garlic, green onions, and tangerine peel. Fold the wing tips back under the duck and tie the legs together with kitchen string. Poke the duck breast a few times, piercing the skin. Place a roasting pan on the stovetop over 2 burners and fill with 2-inches of water, turn the heat to medium. Set a V-rack insert inside the pan and lay the duck on the rack, breast-side up. Cover tightly with aluminium foil. Steam the duck for 45 minutes, checking the water level periodically. Seems obvious but when doing this, make sure you don’t get burnt by the escaping steam. Steaming the duck first melts away some of the fat and shrinks the skin.

In a small saucepan combine the vinegar, honey, and soy sauce over low heat. Bring to a boil and simmer and stir for 15 minutes until sauce thickens. The duck will be lacquered with the sweet glaze, which caramelizes during roasting, making the skin crisp and brown.

Preheat the oven to 190C. Take the foil off the duck, remove the rack with the duck and pour out the water and all the fat that has rendered out. Put the rack with the duck back inside the roasting pan. Baste the duck with the vinegar mixture, until all the skin is completely coated in the glaze. Stick the whole thing in the oven.

Roast the duck for 1 hour, basting periodically with any remaining glaze to set in a deep mahogany colour. Tent the breast with some foil if it gets too dark. I didn’t need to do this as the duck was rather large so it could take the heat. The legs will wiggle easily when it’s done or the usual test – when pierce clear juices will run – works too.

I left it stand for a few minutes while waiting for the sweet potatoes to finish roasting for a mash. Carve and serve.

The duck was served with sweet potato mash and brussel sprouts with garlic and parmesan. Oh and a decent, if not extravagant, bottle of French red.

Spiced Butternut Squash Salad

This is a combination of three recipes, which was going to be either absolutely fabulous or a complete overload of flavours and ingredients. It turned out to the first option and so I am recording it for future reference.

Servings: 4

Ingredients:

800g butternut squash, peeled and cut into 2cm chunks
1 medium bunch of spring onions, trimmed and halved
a few splashes of olive oil
4 cloves of garlic with skin on
2 cm chunk of fresh ginger
2-3 bay leaves
1/2 tsp fennel seeds, lightly crushed
1 tsp coriander seeds, lightly crushed
1 tsp cumin seeds, lightly crushed
100g rocket
cooking chorizo

Soy balsamic dressing:

3 tbsp olive oil
2 tbsp balsamic vinegar
1/2 tbsp soy sauce, I used dark one
1 fresh red chilli seeded and finely chopped
1 garlic clove, finely chopped
1 tsp clear honey

Heath the over to 220C/fan 200C/gas 6. Place the squash, spring onions and garlic in a large roasting tin. Drizzle with 1 tbsp olive oil and sprinkle with seeds and season. Roast for 30 minutes, shaking the tray a couple of times to keep it from sticking.

Whilst roasting slice the chorizo and dry fry until crispy. Set aside.

Pop the garlic cloves from the skins, mash and stir into the dressing. Whisk together the dressing ingredients.

Put the rocket in a salad serving bowl and arrange the squash on top. Pour the dressing over, sprinkle with the crispy chorizo and serve.

Crushed new potatoes with mint & feta

This is one of the best things for summer side dish – the lemon zest and juice in the dressing turns potatoes into light and zesty treat. Mint and feta take it to yet another level.

I got this recipe from Ocado website – it has many decent ones that have served me well. Unlike Waitrose recipes, they are simple to prepare but certainly don’t taste simple.

Ingredients

Serves 4
Cooking time 20 mins

* 3 tbsp Fresh Mint
* 200g Feta Cheese
* 4 tbsp Extra Virgin Olive Oil
* 1 Lemon, unwaxed
* 1 Red Onion
* 1 pinch Black Pepper
* 500g New Potatoes
* 1 tbsp Honey

Cook the new potatoes in a large pan of boiling water until tender, about 10 minutes, depending on size. Drain thoroughly and set to one side.

Pour the oil into a small bowl add the finely grated zest and juice of the lemon and the honey. Whisk. Using the end of a rolling pin or a large wooden spoon, roughly crush the potatoes, not so they are completely broken up but just enough so their skins split and the flesh is exposed so it soaks up some of the dressing.

Finely chop the red onion and sprinkle over the potatoes. Chop the mint and crumble the feta and add to the potatoes, drizzle over the dressing and toss to mix, season well with black pepper and salt if desired, not forgetting the feta can be a bit salty. Serve with salad leaves.

Christmas goose

I found this recipe a couple of months before Christmas 2009, as I was deciding what to roast for Christmas dinner. It is Gordon Ramsey’s recipe and I followed it to the letter apart from the browning, which turned out to be unnecessary.

Ingredients:

4-5.5kg fresh goose
4 lemons
3 limes
1 tsp Chinese five-spice powder
small handful each of parsley sprigs, thyme and sage
3 tbsp clear honey
1 tbsp thyme leaves

Serves 6 Prep: 35 mins. Cook: 1 hr 20 mins – 3 hrs 30 mins

  1. Calculate the cooking time (see tips, below). If the goose is ready-trussed, then loosen the string and pull out the legs and wings a little – this helps the bird cook better. Check the inside of the bird and remove any giblets or pads of fat. Using the tip of a sharp knife, lightly score the breast and leg skin in a criss-cross. This helps the fat to render down more quickly during roasting.
  2. Grate the zest from the lemons and limes. Mix with 2 tsp fine sea salt, the five-spice powder and pepper to taste. Season the cavity of the goose generously with salt, then rub the citrus mix well into the skin and sprinkle some inside the cavity.
  3. Stuff the zested fruit and the herb sprigs inside the bird and set aside for at least 15 mins. Can be done a day ahead and kept refrigerated. I left the goose stuffed and rubbed like this overnight.
  4. Heat oven to 240C/fan 220C/gas 9. If you want to give the bird a nice golden skin, brown in a large frying pan (or a heavy-based roasting tin), using a couple of tbsp of oil. Holding the bird by the legs (you may like to use an oven glove), press it down on the breasts to brown.
  5. Once browned, place the bird in the roasting tin. Drizzle with the honey and sprinkle with thyme leaves. Roast for the calculated time, turning the heat down after 10 mins to 190C/fan 170C/gas 5. Cover the goose with foil if it is starting to brown too much.
  6. Every 30 mins or so, baste the bird with the pan juices, then pour off the fat through a sieve into a large heatproof bowl . You will end up with at least a litre of fat – save this for the potatoes and other veg. At the end of the cooking time, leave to rest for at least 30 mins, covered loosely with foil. The bird will not go cold, but will be moist and much easier to carve.

Whilst the goose was settling down out of the oven, I managed to roast potatoes, parsnips and brussels sprouts. For the full Christmas menu see here.

As for the goose, it came out perfectly, juicy and flavoursome – the citrus fruits worked their wonder and the five-spice some warm magic.

Baked pears with ginger and cardamom

A wonderful dessert (from the Sunday Times magazine) for those times you don’t want to make anything too heavy or have only a few minutes to prepare. The most important about this is the right size of the tin, as pears need to be close together so all the buttery, cardamomy and gingery goodness permeates through them.

4 pears, peeled, halved and cored
75g dark brown sugar
4 tbsp runny honey
1½ tsp ground ginger (I used fresh ginger, thinly sliced using a grater)
Juice and finely grated zest of ½ lemon
4 tbsp unsalted butter
8 cardamom pods, squashed

Preheat the oven to 180C/350F/Gas Mark 4. Put the pear halves in a small roasting pan, cut side down and in a single layer, so they fit relatively snugly. Sprinkle with the sugar, honey, ginger, lemon juice and zest. Dot with the butter and tuck in the cardamom pods.

Put the pan in the oven and bake for 40 minutes, turning the pears cut side up and basting halfway through, until the fruit is tender and the sauce is bubbling and sweet. Allow to cool for 5 minutes, then serve with cream, ice cream or yoghurt.
